Local ingredients shine on the the short menu created by chef Alejandro Ramírez. It’s a homage to the delicacies of Colombia’s different regions, with a wide variety of seasonal produce. In a place where simplicity and constant innovation are king, the main draws include the raw fish of the day with peach palm aioli and lulo fruit foam, pork scratchings with arepa, cottage cheese and vegetable ceviche and Amazonian fish patarasca (wrapped in a bijao leaf) with ripe plantain fritters. It’s worth stopping by this delicious restaurant-bar just to sip on the range of national and imported liquors.
